Vegetable Samosas/Sambusa | Vegan | Middle Eastern Recipe

Ingredients:

  • puff pastry
  • 1 russet potato
  • 1 large carrot
  • 1/2 cup cilantro
  • 1/4 tsp salt
  • 1/2 tsp Pepper
  • 1/2 tsp Cumin
  • 1/2 tsp Mixed Spice
  • 1/2 tsp turmeric

Recipe:

  1. Start by dicing the potatoes and carrots then boiling them until soft
  2. Once they are done, grab a pan with a little olive oil and place the diced carrots and potatoes
  3. Add in the cilantro and spices and mix together on medium-low heat for about 2-3 minutes
  4. Allow the mixture to cool slightly for 10 minutes
  5. Once they have cooled a bit, grab your puff pastries and start filling about 1/2 a tablespoon of the vegetable mixture into the top corner of the puff pastry. (LOOK AT THE IMAGE BELOW FOR FOLDING INSTRUCTIONS 😀 )
  6. After folding all the pastries, its now time to fry them
  7. Grab a deep pan and pour in some vegetable oil
  8. Cook each samosa until golden brown then place on a paper towel to drain off the excess oil
  9. Serve & Enjoy! 😀 ♥
